A tested recipe for a really tasty fish pickle!!! TRY IT.

Ingredients

1. fish (clean and cut into small pieces) - 1 kg

2. green chilli (chopped) - 50 gm

3. garlic (peeled) -200 gm

4. ginger (finely chopped) -150 gm

5. kashmiri chilly powder - 50 gm

6. turmeric powder - 3 gm

7. gingelly oil -200 gm

8. vinegar(1.5% Acetic Acid) -400ml

9. salt    -  60 gm   [30 gm for marinating + 30 gm for cooking]

10. pepper powder - 3 gm

11. cardamom,cloves&cinnamon powder - 2 gm

12. sugar - 5 gm

preparation

*  Add 30gm salt to 1 kg fish [ 3% of fish's total weight] and mix it well. Dry it in sunlight for 2 hours.

*  Deep fry it in sesame oil (gingelly oil).

*  Then fry green chilli, garlic and ginger till it becomes brown and reduce the flame,add kashmiri chilli pwdr, turmeric, pepper powder and salt, mix well, turn off the flame, add fried fish and mix well. Allow to cool.

* Then add vinegar,sugar and no.11(cardamom, cloves & cinnamon powders) and stir well.check for salt.
* Keep this pickle undisturbed for two days for  the flavours to set in.
* After two days, stir the pickle well and fill in a clean and dry airtight  glass container.
* Use it only after two weeks.
* Refrigerate if you want to keep it for long.
